Vegan strawberry lemon bars!

recipe:

Crust:
1/4 cup sugar
2 tablespoons non-hydrogenated vegan butter/margarine
3 tablespoons strawberry apple sauce
1 cup flour

Filling:
3/4 cup strawberry apple sauce
3/4 cup sugar
1/2 cup lemon juice
2 teaspoons vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt
3 tablespoons flour

Preheat oven to 350 degrees. Combine crust ingredients in 8x8 pan and press firmly. Bake for 15-18 minutes or until firm. Combine filling ingredients, mixing very well, and pour onto the baked crust. Baked 20-25 minutes or until set. Let cool completely before trying to dig in! Top with powdered sugar if desired.

You could use other flavors of juice/apple sauce if you wanted to make different variations. I just happen to love the sweetness of the strawberry with the tartness of the lemon!
