Tomorrow for breakfast try a grilled vegan cheese, tomato, avocado, black pepper sandwich. Maybe a dash of plain Tabasco for all you spicy lovers, like me.

toasted olive ciabatta sandwich

Whole Foods sells the best Olive Ciabatta bread. This week it was on sale for $3.99. I was all over it.

I created the following simple sandwich that blew my mind as to how good it was.

Ingredients:

Olive ciabatta bread

Green peppers

Extra Virgin Olive Oil

Vegannaise (optional)

Tomato

Vegan mozzarella cheese

Preparation:

Slice the bread so that it’s approximately 3 inches wide - a fairly thin sandwich. Slice green peppers and tomatoes the same way, as thin and long as possible.

Pour olive oil on bread and evenly spread it out.

Stack tomatoes as high as possible and as many as you’d like. Repeat the same with green peppers. Add on 2-3 thin, long slices of vegan cheese.

On the other slice of bread, add very little vegannaise.

Close the sandwich tightly, put into toaster for dark toast or until vegan cheese melts.

Enjoy. I had this 2 days ago and it was fantastic.

Vegan Philly Seitan Sandwich

Ingredients

Freshly baked Sourdough Bread or your favorite bread

1/4 container of Seitan (unseasoned or the kind with only ginger - do not use the garlic kind)

1/2 Celery stalk

1/8 Red Pepper, 1/8 Green Pepper

1 tomato

Soy Sauce

Vegannaise

Extra virgin olive oil

Cooking instructions

Chop up celery, red peppers and green peppers into tiny chunks.

In a heating pan, pour some olive oil

Add celery first - wait until soft to add red peppers & green peppers

Mix up all the veggies and add seitan

Pour in some soy sauce to taste

Mix up all the ingredients until seitan is slightly browned and veggies are soft

Serving instructions

Toast bread separately or on the same pan. Apply tiny amount of vegannaise, lay down 3-4 slices of tomato, sprinkle with a little black pepper, add seitan + veggie mix.

Enjoy.

This is one of my favorite all-time recipes. I just made this today for lunch and it was delicious. I strongly recommend having this and then drinking rice chocolate milk after dinner.
