Vegan French Toast
A dessert-like breakfast. =)
1. Process all ingredients in a blender until smooth.
2. Lightly oil a large frying pan with a touch of coconut oil, organic canola or non-hydrogenated non-dairy butter (my preference, such as Earth Balance).
3. Dip the bread slices into the mixture, covering both sides. Cook over medium-low heat, flipping once, until golden and crispy on both sides.
Serves 3.
Variations:
Banana French Toast w/ Candied Walnuts
French toast:
1 half loaf of ciabatta bread
1 medium sized banana
1 cup soymilk
1 tsp vanilla
a dash of cinnamon
2 tbs canola oil
Candied Walnuts:
1/2 cup walnuts
3 tbs earth balance
1 tbs sugar
1/2 tsp salt
Instructions for Candied Walnuts:
- Blanch walnuts by boiling them in salted water for about 3-5 minutes. Strain and set aside in a medium sized baking dish.
- Melt butter on stove top.
- When melted, add the sugar and stir until dissolved. Remove from heat.
- Pour over nuts in the baking dish and stir until they are all fully coated. Sprinkle with salt and cinnamon and bake for about 10-15 minutes.
Instructions for French Toast:
- Place all ingredients, except the bread, in a blender and mix until smooth and creamy. You can also whip it with a hand blender, but that gets messy.
- Slice bread about 1/2 inch thick.
- Heat a large skillet with one tbs canola oil. After dredging both sides of the bread and allowing excess to drip off, place on heated skillet. You can use the extra tbs of canola oil if it gets too dry.
- Cook each side about five minutes, or until crispy. Keep warm in 200 degree F oven until ready to serve.
Serving Suggestions:
- Serve french toast with Grade B maple syrup, warmed. Top with sifted powder sugar and a tablespoon or two of candied walnuts.

Vegan French Toast
5 slices wholegrain bread (use a mild-flavored grain, like wheat not rye or sourdough, unless you actually happen to like your French toast with those breads)
1 cup soymilk
1/4 cup whole-wheat flour
1 tbsp maple syrup or agave nectar
2 tbsp flaxseed meal
1 tsp pure vanilla extract
1/2 cup walnuts, finely crushed (optional)
Oil to coat skillet or griddle
in a thin layer
Place all ingredients except the bread, walnuts and oil in a shallow container and mix well.
Place the walnuts in a separate dish
Dip the slices of bread one by one in the batter and coat on either side. I let them soak about 20-30 seconds on each side.
Dip into the walnuts
Heat a skillet and coat with a thin layer of oil
Place a slice of the French toast on the skillet and cook on each side until golden brown.
Serve hot with a drizzle of maple syrup or agave nectar.

Ingredients:
3: ripe bananas
1 Cup : hemp milk – plain or vanilla (or Dairy-free or dairy milk of choice)
2 tsp: cinnamon
1/2 tsp: pumpkin pie spice, optional but a nice touch during winter
1 Tbsp: vanilla
2 Tbsp: ground chia seeds or flax meal
6-8: slices of gluten free bread of your choice but see suggestions above to make this a Vegan recipe
2 Tbsp: Coconut or Organic Canola Oil for skillet (make sure to keep skillet well greased in between batches)
Directions:
1. Blend bananas, milk, cinnamon, pumpkin pie spice, vanilla, and chia or flax, in blender or food processor and pour mixture into pie plate or wide dish.
2. Gently dip bread slices into the mix, coating both sides well.
3. Fry in oil in medium-hot skillet until golden brown, about 2-3 minutes per side.
4. Serve with maple syrup and fresh fruit, if desired, and enjoy.
